It’s Diaspora Spiced Cookie Week! I believe many desserts are far better with a touch of spice in them (I mean, have you tried this Spiced Apple Galette?!) and cookies are no exception! If you’re planning to do a cookie box exchange with your friends, or simply want to bake fresh, warm cookies at home during the holidays, here are my recs:
Spiced Cacao Cookies with a Coconut Glaze: These cookies are an ode to the Anamalai Estate, where our cacao, nutmeg and mace are grown. Another crop found in abundance on the farm is coconuts—and, you know what they say, what grows together goes together!
Garam Masala Orange Shortbread: Garam Masala is often relegated to savory cooking but the balance of savory and sweet spices—like cumin, coriander, fennel, cinnamon, and cardamom—are perfect in baked goods and desserts. These are buttery, crispy, delicately citrusy cookies with a gentle, lingering spice.
Asha’s Haldi Doodhles (Golden Milk Snickerdoodles): Highly spiced with crispy edges, a cakey middle, and a signature tang (thank you, cream of tartar!), these cookies are sure to steal the show in any cookie box or at any sweets swap.
Laurie Ellen’s Saffron Honey Biscuits: Kashmiri Saffron is the star in these luxurious golden cookies, and honey enhances the saffron's natural sweetness, lingering on the tongue with a light floral and slightly funky element.
