Chaat Masala is back in stock, and right in time for the first signs of spring! Tangy, sour, and mouth-puckeringly delicious, we like to describe Chaat as the green mango Tajín of the Indian subcontinent! Think of it as a zesty finishing salt that adds a funky, fruity (dried mango powder is a key ingredient here) flavor to anything you add it to. My go to recco for chaat is to simply sprinkle it over fruit (mango and peach are ideal), on your avo toast, or on the rim of a cocktail glass. Pro tip: mix 1/2 a teaspoon into a glass of lemonade to give it a tangy twist.
Given the abundance of seasonal greens and alliums at the farmer’s market right now, I highly recommend using it to make this fantastic Big Chaat Salad! First, white or yellow onion is fried until golden and crisp. Then, the onion-infused oil is used as a base for a sweet & tangy dressing with tamarind, lime, and jaggery. You can stop right here and simply toss your greens, and some diced avo and cucumber into the dressing. Or, follow the recipe, and toss paneer and chickpeas with Chaat Masala and chilli powder, and roast until crisp on the outside and tender on the inside. Butter lettuce, microgreens, and heirloom or cherry tomatoes add welcome bursts of freshness, and the fried onions and pomegranate arils on top add perfect little bits of crunch and sweetness!
