I find myself using them as my go-to all-purpose chilli - in Korean, Italian and South Asian cooking alike. They’re perfect for a sizzling tadka over lentils or combined with our Wild Heimang Sumac, coconut sugar, and flaky salt as a rim for a Pineapple Mezcalita, in a smoky umami kimchi or paired with cinnamon, nutmeg and black pepper for a bolognese that’s got real depth of flavor.

Brothers Hanumantharao and Satyanarayana Rao of the Narne family farm in Guntur, Andhra Pradesh, grow their chillies in accordance with the principles of zero budget natural farming—that means no fertilizers or pesticides, and a variety of companion and rotational crops that boost biodiversity, nourish the soil and provide year round harvest income. The chillies grow alongside peanuts, lentils, tomatoes, and eggplants; all of which make it a farm that’s so much more resilient to pest attacks, floods, or unseasonal rains. This is no small feat, especially given that the Rao brothers adopted these methods and transformed their family farm completely when they were in their 60s—a real testament to the fact that sustainable agriculture can be learned and adopted irrespective of age and generational practices.
