We’re one year out, and while that may feel like a ways away, it’s a huge milestone over here. After many months spent neck-deep in recipe-testing and writing (and rewriting) the manuscript with our Recipe Editor Asha Loupy, I couldn’t wait another second to tell you.
For 5 of Diaspora Co.’s 8-ish years, I spent January through March visiting our farm partners across India and Sri Lanka. I walked fields at dawn, tasted seeds fresh off the vine, and bent low to the ground to observe larvae at work. But the most special and enduring moments were always sharing home-cooked meals under trees and by fires with the amazing humans who grow the spices I source. Each visit left me asking: How can we tell people about these incredible meals—made with such care, delicacy, and, above all, fresh ingredients. Six years and 40 collaborators later, this cookbook is my answer.

Cookbooks are my bedtime stories. Archana Pidathala’s Five Morsels of Love taught me about the fiery, complex spice powders of Andhra, Meera Sodha’s Fresh India made me love vegetarian kebabs, the Dishoom Cookbook made me fall back in love with the flavors of Mumbai, and Samin’s Salt Fat Acid Heat absolutely transformed me as a cook. But I never found one that truly centered Indian and Sri Lankan farm food: the terroir, the hands that grow the spices, the regional knowledge and context behind every dish. As a professional spice-slinger, I found myself wanting so badly to tell you how our farm partner Abraham Chacko cooks with the green cardamom he grows in a forest in Udumbanchola, Kerala, or what Shirley Parameswaran makes with her estate’s complex vine-ripened black pepper that has become our bestseller. Creating this incredible archive while still being equitable translators of regionality, complex geopolitical truths, and truly special flavors was no small feat (hence, the 6 years and 40 collaborators, you see).
We’ve, quite frankly, poured our hearts, cash, and labor into making this book a reality, while trying to do it all in the most rigorous way possible.
