Fruity, sour, tangy and slightly sweet—lemon pickle is your easiest gateway into the wonderful, diverse world of Indian pickles! In case you missed it, we launched our newest collab masala last week—a deliciously smoky, tangy Achari Masala made in collaboration with bestselling cookbook author Nik Sharma. Achar means pickle in Hindi, and is an umbrella term for the wide variety of pickles (featuring everything from fruits, vegetables, meats and dried seafood) that are found in households across India. Distinct from Western pickles in their sheer variety and the fact that they are fermented in the sun, Indian pickles are used as accompaniments to spice up even the most boring meals. Our Achari Masala bottles up those complex flavors into a lip-smacking blend that you can use to pickle just about anything, but also to level up your braises, curries and roasted vegetables with a wonderful balance of acid and heat. If pickles are not your jam, there’s sooo much more this blend can be used for! We spent years doing R&D and recipe tests to make sure of that. If you’re vegetarian (or even if you’re not), try Nik’s Achari Squash Pizza which features gorgeous golden-brown roasted squash tossed in Achari Masala, olive oil and sea salt on a fluffy, thin-crust pizza base.
Nik grew up in the West coast of India, so we had to make a fish curry to pay homage to his childhood. Nik’s Achari Fish Curry is fragrant and mellow while still being incredibly flavorful, and is best enjoyed over a steaming hot serving of basmati rice. He also has a fantastic Achari Lamb recipe—a rich, aromatic stew that tastes best when mopped up with roti or naan. Here’s a lil’ tip: if you’ve already made the lemon achar, stir in 1-2 tablespoons of it into the stew after it’s done cooking, for a touch of zing.
